Flourless banana pancakes

1 whole banana, mashed very well
8 whole eggs
1 tsp cinnamon
1 tablespoon coconut oil

  1. Mix the mashed banana, eggs and cinnamon together in a bowl very well. This is the batter that you’ll use for your pancakes.
  2. Turn your griddle on medium and let it heat up. Add the tablespoon of coconut oil and let melt down to coat the entire pan.
  3. Once everything is nice and hot add very small silver dollar sized panckaes to you pan. Be sure to keep them small as they are fragile and can be difficult to flip. Once they bubble on the raw side and look more white than yellow or opaque (about 2-3 minutes) gently flip them over one at a time. They should be golden brown on one side and cook quickly on the other side.

    Hint: as they are difficult to flip due to their fragility try using two spatulas until you can shimmy the pancake onto one without breaking it!

  4. Serve with a very small drizzle of syrup if you’d like (a teaspoon is more than plenty!) as they are sweet and delicious – just like a banana pancake should taste!
