Baked chicken tenders

Everyone knows and loves chicken tenders! it was a staple we all grew up on and big-wig companies have taken it to a whole nother level. Let’s get back to the basics with this delicious and simple BAKED chicken tender recipe that even adults will love!

Servings: 4

1 Cup Coconut Milk (or milk of choice)
2 Cups coconut Flour
1 tablespoon paprika
1 tablespoon pepper
2 teaspoons salt
6-8 Gluten free crackers of choice, smashed
4 boneless skinless chicken breast

  1. Preheat the oven to 400 degrees.
  2. After washing off and patting dry the chicken dice into desired shapes- nuggest, strips, hearts, stars, or horseshoes!
  3. Add the chicken to a bowl with the coconut milk and let sit for at least 30 minutes. Combine the remaining dry ingredients in a shallow bowl, like a pie plate.
  4. Coat Each piece of chicken in the dry ingredients by patting the mixture on with a fork or by hand.
  5. Place each piece on a greased baking tray.
  6. Bake the chicken for twenty minutes.
  7. Remove the chicken, flip each piece, and broil for another 10 minutes to get the desired crispiness you’re looking for.
