Vegan Zucchini Fritters

Servings: 4
2 large zucchini, grated
1 tsp salt
4 large garlic cloves, minced
2 tsp baking powder
1 cup kamut flour (or flour of choice)
1 tsp coriander
¼ tsp onion powder tsp freshly ground black pepper
2 tbsp olive oil
- Sprinkle salt over freshly grated zucchini and let it sit for about an hour to remove excess moisture from the vegetable.
- Place the zucchini in a clean towel and squeeze out the remaining moisture.
- Add the zucchini to a large bowl with the remaining ingredients except the oil.
- Mix well and form into patties of desired size.
- Add the oil to a pan and heat on medium heat.
- Fry each side of the patties for about 4 minutes or so until golden brown.
- Serve with vegan sour cream and fresh chives for flavor and presentation!
