Cilantro Lime Chicken with Avocado Salsa

This zesty dish is perfect for an easy go-to as left overs or a quick-whip up on a work night. The lime in the marinade penetrates the chicken quickly which means it doesn’t have to sit for hours ingesting flavor! Easy, peasy, limey-squeezy!

Servings: 4

Chicken
2 tablespoons minced fresh cilantro
2 ½ tablespoons fresh lime juice
1 ½ tablespoons olive oil
4 skinless boneless boneless chicken breasts
salt and pepper to taste

Salsa
1 Cup chopped plum tomato (about 2)
2 tablespoon finely chopped onion
2 teaspoons fresh lime juice
1 ripe avocado peeled and chopped
salt and pepper to taste

After washing off and patting dry the chicken breast combine with all the ingredients and let sit for a few minutes. While the grill pan (or grill) heats up begin to chop the salsa ingredients. On medium heat add the marinated chicken breasts and cook about 6-8 minutes on each side or until fully cooked. If you have a thermometer the chicken should stay at 165 degrees for at least one minute. Combine the above salsa ingredients in a bowl. Once the chicken is finished top with the salsa and enjoy!
