Cauliflower Crust Pizza

Pizza is one of those foods that everyone simply loves. But at what cost? This recipe satisfies all your pizza cravings while remaining gluten (and guilt) free! Enjoy the tasty herbed crust made from cauliflower. The best thing about pizza? Enjoy any combination of toppings you like!

Cauliflower Crust Pizza

Crust:
2 pounds cauliflower florets, riced
1 egg, beaten
1/3 cup soft goat cheese (chevre)
1 teaspoon dried oregano
pinch of salt

Directions:

  1. Place the 2 lbs of cauliflower in the food processor and blend until “riced.” You’ll know it’s done when it is almost the exact constancy of rice.
  2. Bring about 1 inch of water in a pot to a boil and add the cauloflower. Allow to cook for about 4-5 minutes.
  3. Strain the caulifower and place in a dish cloth. Using a clean, thin, cheesecloth like a dish cloth will help the process.
  4. Wrap the vegetable up to squeeze as much water out of it as possible.
  5. Combine all the crust ingredients in a bowl and mix together.
  6. On a baking sheet lined with parchment paper, shape the crust to about ⅓” thick.
  7. Bake for 35-40 minutes at 400ºF.
  8. Remove the crust from the oven and add your favorite toppings. Be as traditional or creative as you want!
