Pork Chops with Apple, Onion & Bacon

Pork is sometimes referred to as “the other white meat” and nutritionally comparable to chicken. That being said, a change from chicken is always welcome in everyone’s diet! The best part? Pork chops are packed with vitamins B6 and B12. These two key vitamins help decrease homocysteine – the known blood marker for inflammation. Enjoy this paleo pork chop meal!
Pork Chops With Apple, Onion & Bacon
Servings:4
Ingredients
4 4oz boneless pork chops (organic and antibiotic free)
3 tbsp olive oil
½ tsp sea salt
½ tsp freshly ground black pepper
1 tbsp fresh thyme
1 medium onion, peeled and cut into wedges
2 medium Granny Smith Apples, peeled, cored and cut into 8 wedges
4 ounces sliced bacon, cut into bite-size pieces
Directions>
- Preheat oven to 425°F.
- Add two tablespoons of the olive oil to a pan and heat on medium-high.
- Season each side of the pork chops with salt and pepper.
- Add the pork chops to the hot pan and brown the outsides (about 2-3 minutes each side).
- Remove the pork from the heat.
- Add the remaining oil and ingredients to the pan. Toss everything together and cook for a minute or two to blend flavors.
- Add the fruit and vegetables to a glass or cast iron pan and bake for 25 minutes.
- Add the pork to the glass or cast iron pan along with all the other ingredients and bake for another 10 minutes.
