Pesto Chicken

Those long work days can be a drag sometimes, and often cooking might be the last thing you want to do. Luckily, the pesto you made last week comes in handy with this delicious chicken recipe. By the time it is halfway cooked in the oven, your mouth will be watering with the aromatic herbal scent!

Pesto Chicken
Servings: 4

4-6 de-boned chicken breasts
8 tablespoons of homemade pesto (Click Here for last week’s two different style recipes!)
1 vine-ripened tomato
2 tablespoons grated parmesan cheese (if desired)
1 tablespoon lemon juice

Directions:

  1. Preheat the oven to 350 degrees.
  2. Wash the chicken off and pat dry.
  3. Rub each piece with the pre-made pesto.
  4. Place in a baking dish.
  5. Slice ¼ inch slices of the tomato and lay over each piece of chicken.
  6. Sprinkle the lemon juice over the dressed chicken breasts.
  7. If desired, sprinkle the cheese over the top of each piece.
  8. Bake for 40 minutes.
  9. Finish by broiling the whole dish for about 3 minutes.
