Paleo Granola

Granola is a great way to top off salads, coconut yogurts, sweet treats and many more foods! However, it can contain gluten, be loaded with sugar, and be very carb-heavy, making it an unhealthy option. Try this Paleo Granola packed with protein and just a touch of sugar to make you smile.

Paleo Granola

Ingredients

½ cup raw almonds
½ cup raw cashews
¼ cup raw shelled pumpkin seeds
¼ cup raw shelled sunflower seeds
½ cup unsweetened coconut flakes
½ cup coconut oil
½ cup raw honey
1 tsp vanilla extract
1 tsp sea salt
1 tsp cinnamon

Directions

  1. Preheat the oven to 275 degrees F.
  2. Combine the nuts and seeds and pulse in a blender until they’re chopped. It will look slightly powdery but chunks of nuts are welcome.
  3. Add the honey, coconut oil and vanilla to a pan and heat. Stir and combine together.
  4. Add the blended nuts, salt, cinnamon and coconut flakes to the pan with the honey mixture and combine.
  5. Spread the mixture on a baking sheet.
  6. Bake for 30 minutes or until browned and crispy.
  7. Let cool for 30 minutes and break apart.
