Paleo Granola

Granola is a great way to top off salads, coconut yogurts, sweet treats and many more foods! However, it can contain gluten, be loaded with sugar, and be very carb-heavy, making it an unhealthy option. Try this Paleo Granola packed with protein and just a touch of sugar to make you smile.
Paleo Granola
Ingredients
½ cup raw almonds
½ cup raw cashews
¼ cup raw shelled pumpkin seeds
¼ cup raw shelled sunflower seeds
½ cup unsweetened coconut flakes
½ cup coconut oil
½ cup raw honey
1 tsp vanilla extract
1 tsp sea salt
1 tsp cinnamon
Directions
- Preheat the oven to 275 degrees F.
- Combine the nuts and seeds and pulse in a blender until they’re chopped. It will look slightly powdery but chunks of nuts are welcome.
- Add the honey, coconut oil and vanilla to a pan and heat. Stir and combine together.
- Add the blended nuts, salt, cinnamon and coconut flakes to the pan with the honey mixture and combine.
- Spread the mixture on a baking sheet.
- Bake for 30 minutes or until browned and crispy.
- Let cool for 30 minutes and break apart.
