Paleo Brownies

A sweet treat is always on people’s minds when dieting or learning to live a new diet lifestyle. These decadent brownies bring the best of both worlds to one chocolatey dessert­. Healthy and yummy! Try these awesome brownies out for your upcoming holiday and watch the “wow” effect!

Paleo Brownies

Ingredients
1 sweet potato
3 eggs, whisked
1⁄4 cup virgin coconut oil, melted
1⁄3 cup raw honey
1⁄4 teaspoon vanilla extract
2 tablespoons unsweetened cocoa powder
1⁄4 teaspoon baking powder
3 tablespoons coconut flour
1⁄4 teaspoon cinnamon
pinch of salt
1⁄4 cup of Enjoy Life chocolate chips
1⁄4 cup peanut butter chips

Directions

  1. Preheat your oven to 425 degrees.
  2. Poke the sweet potato with a fork a couple of times all around. Bake the sweet potato for about 50 minutes until completely tender.
  3. Once completely cooked, remove the skin of the potato and mash well in a bowl. You might want to let it cool a little bit first.
  4. Turn the oven down to 350 degrees.
  5. Combine all the wet ingredients: potato, egg, honey, coconut oil, and vanilla.
  6. In a separate bowl, combine all the remaining dry ingredients except the chocolate and peanut butter chips.
  7. Slowly add the wet ingredients to the dry and stir until combined.
  8. Pour into a greased 9×13 brownie pan and sprinkle the chips all over the top however you’d like them.
  9. Bake for 30 minutes.
