Garlic Shrimp Scampi

Shrimp is one of the most simple and versatile fish to cook. Not only is the price point lower than other fish, but the mercury level is too! Try this Italian classic modified for your eating pleasure.
Garlic Shrimp Scampi
Servings: 4

40 large peeled and deveined shrimp, raw
8 cloves garlic, minced
1 whole lemon, juiced
1 tsp lemon zest
2 tablespoons fresh minced parsely
1 Tablespoon italian seasoning
4 tablespoons olive oil
Salt and pepper to taste

Directions

  1. Add half the olive oil to a pan and turn on medium and high and let heat up.
  2. You can cook the shrimp with the tail on or off, your choice. Add the shrimp to the pan and let cook.
  3. About 3 minutes after adding them to the pan, flip each shrimp, add the left over oil and garlic
  4. 4. Add the lemon juice, zest, italian seasonings, half the cilantro and salt and pepper
  5. 5. Cook another 3­5 minutes until the flesh of each shrimp is fully pink
  6. 6. Add the remaining cilantro for fresh flavor and garnish
