Berry Tart

Often times dessert recipes are loaded with added sugar, gluten, excessive fat and dairy. But why sacrifice a treat for yourself when you can make an easy and delicious berry tart! All berries are low on the glycemic index and are detox diet friendly! Be sure all of your fruit is organic.

Crust:
1 Cup Coconut flour
½ Cup coconut oil
1 tsp salt

Filling:

½ Cup strawberries
½ Cup Blueberries
½ Cup Raspberries
½ Cup Blackberries
¼ Cup raw honey (optional)
½ peach, sliced for decoration (optional)

  1. Preheat your oven to 400 degrees.
  2. Combine the coconut flour, oil, and salt in a large bowl and start to work the mixture with your hands. it should be moist but crumbly.
  3. Grease your pie pan with a little more coconut oil.
  4. Add the crust mixture a little at a time molding into the shape of the pie dish. The crust should be about a quarter inch all around the pan, depending on the size of the diameter.
  5. Using a fork poke holes all over the base of the pan to prevent bubbles and cracking of the crust while baking.
  6. Bake for about 10 minutes until the crust is golden.
  7. Remove the stems from all the fruit and lightly chop. Cooking them will do most of the work to break down the berries.
  8. Add all the berries to a pan on medium-low heat. As the berries heat up they will slowly start to break down. Using your tool of choice (I like a potato masher, spatula, or a large flat spoon) break the berries as they cook.
  9. Stirring and mashing occasionally let the berries cook for about 15 minutes or until desired consistency. It should look like a jam.
  10. Add in the optional honey.
  11. Immediately add the berries mixture to the pie crust. If you’d like, lay the peach slices on top in a decorative fashion. Place in the fridge to cool and congeal.
  12. Either enjoy cold/room temperature or slightly heat for about 10 minutes for a warm pie. But be careful not to heat it too long as it will not stay together.
