Whole Roasted Chicken With Orange and Thyme

Winter is the perfect time to enjoy hearty, savory, oven-roasted meats. In this dish, the combination of the thyme and citrus give this chicken a mouth-watering aroma, and it tastes as good as it smells! Save any leftovers for delicious soups and stews!
Ingredients
7 lb whole chicken
3 teaspoons fresh thyme
1 orange, diced in cubes
¼ orange, juiced (save a few slices)
½ lemon, juiced
¼ cup olive oil
¼ cup dry white wine
1 tsp onion powder
Salt and pepper to taste
Directions
- Preheat the oven to 350ºF.
- Rinse the chicken under cool water and remove any unwanted innards. These are great to fry up quickly for pets!
- Pat dry the chicken and lay it in a roasting pan.
- Combine the thyme, lemon juice, orange juice, white white, olive oil, salt, pepper and onion powder and whisk together in a bowl.
- Stuff the cubed orange inside the chicken with a few extra sprigs of fresh thyme.
- Drizzle the dressing all over the chicken and lay a few extra orange slices over the top of the chicken.
- Roast in the oven for 1.5 hours or until the internal temperature holds at 165ºF for one full minute.
- Remove from the oven and let sit for at least 15 minutes to retain its juices.
- Carve and enjoy!
