Caramelized Banana Protein Mug Cake

Hey all you sweet tooth-ers! Being gluten free doesn’t have to mean giving up sweet treats–like cake! This “mug cake,” named for being made in a mug, is gluten, dairy, and soy free. Indulge in this sweet treat without worrying about any heavy sugars or unwanted additives. Life is sweet when it’s simple.
Ingredients
½ banana, sliced
1 tsp coconut oil
1 tbsp chocolate vegan protein powder
2 tbsp coconut flour
1 tsp unsweetened cocoa
1 tbsp honey
¼ cup coconut milk
¼ tsp baking powder
1 egg
1 tbsp dairy-free chocolate chips
Directions
- Add the coconut oil to a pan and bring to medium heat while it melts.
- Add the banana slices and cook for about 2 minutes on each side or until nice and golden.
- Drizzle the bananas in half of the honey and reserve the rest for later. Set them aside.
- Combine the protein powder, cocoa, coconut flour, and baking powder in a microwave-safe bowl or mug (hence “mug cake”).
- Add the coconut milk and the rest of the honey. Stir well.
- Add the egg and whisk until smooth.
- Fold in the chocolate chips.
- Microwave for 3 minutes.
- Top with the banana slices and a little drizzle of honey.
